Spanish Moroccan Red Lentil Dish

 Serves 6

Served at the welcome dinner for the 5-Day Walk in March 2024.

Ingredients

  • Brown Onion x 1
  • Olive Oil
  • Spices (see below) – Ground spices and powdered vegetable stock. If you are short one or two spices just leave them out. The result will still be good.
  • Canned Tomato – 400g Crushed or Diced
  • Carrots x 3 (large)
  • Potato x 1 (large)
  • Red Lentils x 160g
  • Fresh coriander (optional)

Saute’ onion for 4 to 5 minutes

1 x Brown Onion

40g Olive Oil

Add spices and cook 1 minute to release flavours 

1 tsp ginger

1 tsp coriander

1 tsp cumin

1 tsp sweet paprika

½ tsp cinnamon

½ tsp turmeric

¼ tsp mild chilli

¼ tsp nutmeg

2 to 3 Tbsp vegetable stock – depends on how strong the stock you’re using is.

Add vegetables and lentils

Cook 20 – 25 min High slow stir occasionally

1 x 400g can crushed tomato

2 x 400g water (use the above opened tomato can)

3 large carrots peeled and diced

1 large potato peeled and cut into 1cm cubes

160g red lentils, rinsed


Ready when the lentils, carrots and potato are soft enough to eat

Add the fresh coriander for topping (optional)

Can be served with bread or rice.
